Our Gran Reserva shoulder it has been prepared with our traditional salt procedure and then it is allowed to mature in natural stores to make sure we get a pork product with exquisite flavour. When cut, the meat has plentiful and bright fat marbling and the colours resemble those of the Iberian shoulder.
